Along a country road between Owasso and Collinsville, the trees at Don Chiartano's farm are heavy.
It's a sure sign of apple season.
Chiartano researched apple orchards for six years before his first planting in 1995. And then he waited. And waited. It took six years to produce fruit, but it was worth it.
These aren't the big, shiny apples you'll find in grocery stores. Chiartano's apples are smaller, a little rugged and are sometimes sold with the leaves still intact. Don't you love that?
You can find Chiartano's apples at the Cherry Street and Brookside markets. He will have plenty of Liberty apples, a small all-purpose apple that's akin to a McIntosh. It's good for saucing, baking and eating.
His Enterprise apples will be more limited, so you'll have to be early to catch these rich, spicy apples. Enterprise apples are perfect for savory foods and for applesauce.
For applesauce as a side with pork chops or hash browns, stir in a little chopped rosemary in this recipe from the "Comfort Food" cookbook from Southern Living.
HOMEMADE APPLESAUCE
Makes 6 cups
12 large apples, peeled and coarsely chopped
1 cup sugar
1/2 lemon, sliced
1. Cook all ingredients in a Dutch oven over medium heat, stirring often, 20 minutes or until apples are tender and juices are thickened. Remove and discard lemon slices.
2. Serve applesauce warm; or let cool and store in an airtight
container in the refrigerator for up to 1 week.
Spiced Applesauce: Substitute
1/2
cup firmly packed brown sugar and
1/2
cup granulated sugar for 1 cup sugar. Omit lemon slices, and add 1 teaspoon ground cinnamon and
1/4
teaspoon ground cloves; prepare as directed.
