1,000 Gluten-Free Recipes

I know a lot of Tulsa World readers struggle with gluten-free diets. Often, people will write me wondering if anyone out there has a good recipe for a gluten-free piecrust, chocolate cake or any number of other "off limits" foods.
Fortunately for those with celiac disease and other gluten intolerances, there are lots of good gluten-free cookbooks and gluten-free products at grocery stores.
The most comprehensive book I've seen is a new one called "1,000 Gluten-Free Recipes" by Carol Fenster. Carol is a foodie who, 10 years ago, walked out of her doctor's office with the words "Don't eat wheat," ringing in her ears.
Fenster's book is great, covering everything from gingerbread to spaghetti and meatballs.
The 720-page book is $35 and is published by Wiley.

PEANUT BUTTER BALLS
1/4 cup crunchy peanut butter
1/3 cup honey
1 teaspoon pure vanilla extract
1 cup gluten-free rolled oats (Bob's Red Mill is one brand)
1/2 cup cornstarch
2 tablespoons finely chopped peanuts
2 tablespoons ground flax meal
1/4 teaspoon xanthan gum
1/4 teaspoon salt
2 tablespoons powdered sugar (or enough to roll 36 balls)
1. Place the peanut butter, honey and vanilla in a food processor, and pulse a few times to blend. Add the oats, cornstarch, peanuts, flax, xanthan gum and salt, and process until the ingredients are well blended. Scrape down the sides of the bowl and process again.
2. With wet or lightly oiled hands, shape the dough into 24 balls, each 1 inch in diameter, and place on a sheet of wax paper to firm up. Roll in powdered sugar. Store, tightly covered, up to 2 days.

Yes there lots of good food out there and we have a gluten free store and bakery in Wagoner. CC's Gluten Free Foods 204 S. Main Fri and Sat 10-7. We do birthday cakes, cupcakes, bread, dinner rolls cookies and stuffed breads. We also do donuts on Saturday mornings. Glinkies are another item it is a creme filled sponge cake. We also have several gluten free and dairy free items. Everything in the store is gluten free.
