Applesauce

Once I overheard a woman say she would NEVER buy applesauce. She said it so adamantly that I had to listen closer.
"That stuff from the grocery store is awful. I make my own once a week and keep in the refrigerator," she said.
That's impressive, but not something I'll ever be able to say. I love homemade applesauce, but I certainly wouldn't go to the lengths to make it once a week.
My storebrand of choice is Musselman's unsweetened.
But back to homemade.... I recently had the best applesauce I've ever tasted. It was from my friend Cathy, who made it with local, just-picked apples from our friend Charlotte's backyard.
I wanted to know the secret ingredient, the one thing that made this applesauce so good. But there is no secret, only that the apples were fresh and so good to begin with. Good apples = good applesauce.
Here is Cathy's recipe.
APPLESAUCE
12 to 14 apples (small to medium size)
1/2 cup sugar (I'd start with this and add according to taste)
1 to 2 teaspoons cinnamon
1/2 cup water (add a little more if it's too thick)
1. Peel and coarsely chop apples. I put the peeled, chopped apples in a bowl of water with a little lemon juice so they won't darken too much. I really just wing this.
2. Put some apples in a saucepan (I think a 3-quart pan), add a little sugar and cinnamon, a little water, let it cook down. It takes at least 30 minutes on medium-low; then add apples, water, sugar until you get what you want. It's my opinion that the apples are everything - a little tart is best.
NOTE: I think not adding the apples all at once, but a few as they are peeled, gives a good consistency with chunks and sauce because of the different cooking times.

Cathy tells me that she freezes the applesauce in plastic quart-size freezer bags. Much easier than canning!
