Buttermilk candy

Do any of you know anything about buttermilk candy?

I had some extra buttermilk that I didn't want to go to waste, so I made buttermilk candy last night.

I have seen this old-fashioned recipe before but have never made it.

I looked around online, and some recipes call for letting the baking soda and buttermilk stand for as long as 20 minutes before cooking. Some call for bringing the mixture to a soft-ball stage, and others simply call for it to come to a boil.

Who knows if what I made last night is anything like what buttermilk candy should be? But it does taste good....with the flavor of something between a praline and toffee.

If you have a good buttermilk candy recipe or have any memories of it, please share.

BUTTERMILK CANDY
1 cup buttermilk
1 teaspoon baking soda
2 cups sugar
2 tablespoons light corn syrup
2 tablespoons butter
1 teaspoon vanilla
1 cup chopped pecans
1. Add soda to buttermilk in a 4-quart saucepan. Stir well and let stand 1 minute.
2. Add sugar and corn syrup. Cook to soft-ball stage, 236 to 238 degrees.
3. Remove from heat. Add butter, vanilla and nuts. Mix until it begins to thicken. Pour into a greased pan, or drop by teaspoons on buttered cookie sheet.

OK, here's one from a Cookbook older than you young lady.
2 1/2 C Sugar
1 C buttermilk
1/3 C corn syrup
1 t soda
1 T butter
1 t vanilla
1 c pecans
Cook sugar, buttermilk and syrup to hard boil stage. Remove from heat and add soda, butter and vanilla. Then add pecans and beat well. Pour in buttered platter. This came from a Garvin County, Pauls Valley, Cookbook some 50 plus years old. The book was given to my wife, Bobbie and me as a wedding gift.
