Cake mix cookies are a breeze to make

Toffee Chip Cookies are made with six ingredients.
Here's a quick tip: A box of cake mix can be used for more than making cake.
One of my favorite things to do with a cake mix is to bake cake mix cookies. These cookies are perfect for summertime when most of us are too busy playing outside to hang out in the kitchen.
In Monday's Scene section you'll find a fun story on making cupcake cones. These easy cupcakes, made from a cake mix, are presented in little cake cones. It's a great idea for a kid's birthday party or just a cool treat.
Or give these cake mix cookies a try. The toffee chip are my favorite.
Toffee Chip Cookies
Makes about 5 dozen
1 box Betty Crocker butter pecan cake mix
1/2 cup oil
2 eggs
1 cup chopped pecans
1 cup chocolate chips
1 cup Heath toffee bits
1. Mix the cake mix, oil and eggs by hand in a large bowl. Add pecans, chocolate chips and toffee bits, and mix well.
2. Bake on ungreased cookie sheet at 350 degrees for approximately 10 to 15 minutes.
Chocolate-Peanut Butter Cake Mix Cookies
Makes about 3 dozen
1 package chocolate cake mix
1 large egg
¼ cup oil
¼ cup water
1 cup peanut butter chips (or nuts, raisins, oatmeal, coconut or chocolate chips)
1. Combine cake mix, egg, oil and water. Beat until well blended. Stir in remaining ingredient(s).
2. Drop by rounded teaspoons about 1 to 2 inches apart onto greased cookie sheet (or use parchment). Bake for 12 to 15 minutes at 350 degrees.
Lemon Cake Mix Cookies
1 box lemon cake mix
2 cups Cool Whip
1 egg
Powdered sugar
1. Combine cake mix, Cool Whip and egg in a large bowl. Mix by hand until combined.
2. Drop by tablespoonfuls into powdered sugar, and roll to coat. Place balls on cookie sheet, and bake 10 minutes at 350 degrees. Remove cookies from oven before they get very brown.
