Charlotte Richert of the OSU-Tulsa County Extension Center just sent a recipe that would be great for any family on a budget.

Charlotte, who has a big family of her own, says you can get about six 1-cup servings from this recipe for less that $10. Approximate cost for per serving is $1.15.

BUDGET SMART CHICKEN ALFREDO

8-ounce package rotini, uncooked

1 (10-ounce) package frozen mixed vegetables

12 ounces frozen chicken breast

1 tablespoon olive oil

1 can low-fat chicken alfredo-style soup

¼ cup grated Parmesan cheese

½ teaspoon salt

¼ teaspoon freshly ground pepper

1. Cut chicken breast into bite-size pieces. Cook over medium heat in 1 tablespoon of olive oil.

2. Cook pasta according to package directions in boiling water. Drain pasta. Add vegetables, soup and Parmesan cheese to chicken, stirring well. Cook over low heat for 5 minutes or until vegetables are tender. Season with salt and pepper.

3. Serve over pasta with a salad and garlic bread for a colorful and budget-smart meal.
