I have invitations for three baby showers on my refrigerator right now.

I'm not hosting any of these showers, so I'll have fun balancing little plates of tea sandwiches, fruit and cake on my lap, all the while trying not to spill pink punch on the carpet.

A friend of mine who hosted a shower this weekend was having trouble coming up with a menu. She wanted something that tasted great....something more than cheese and crackers and a vegetable tray.

She settled on chicken salad with croissants. Her version was a hit.

People are particular about their chicken salad. Some like it plain, meaning no fruit or nuts. Others like a little crunch. This one is pretty loaded with stuff, which is the way I typically like it.

Grill the chicken breasts for an even better flavor.

Chicken Salad

4 skinless, boneless chicken breast halves - cooked and diced

4 green onions, chopped

1 Golden Delicious apple, peeled, cored and diced

1/3 cup golden raisins

1/3 cup seedless green grapes, halved

1/2 cup chopped and toasted pecans

1/8 teaspoon ground black pepper

1/2 teaspoon curry powder

3/4 cup light mayonnaise

1. In a large bowl combine the chicken, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together. Serve.
