My Mamaw Walters was a stellar cook.
I know people say that about their grandmothers frequently, but she was
seriously gifted when it came to cooking and baking. Her cast-iron-skillet cornbread, roast with gravy, mashed potatoes, chocolate cakes and blackberry pies were the best of any I've ever had.
Ever.
As I wrote in my Tuesday column about Papaw Walters, who passed away 26 years ago May 26, I wanted to share a recipe with y'all. He loved to see his grandkids chow down, which was an easy endeavor considering Mamaw's kitchen prowess -- especially with cakes.
Her pound cake had an extremely short shelf life around my cousins and me, who could devour a whole one in less than an hour, before the thing even had time to cool.
Mom found an old index card on which Mamaw had scribbled her recipe, then framed it for her kitchen. I'm assuming you'll know what to do with all this once it's mixed up because it's pretty brief on instructions.
Mamaw's Pound Cake
Serves 8 grandchildren3 sticks Oleo
1 (8-ounce) package cream cheese
3 cups sugar
Dash salt
1 1/2 teaspoons vanilla
6 large eggs
3 cups cake flour, sifted
Bake 325 for 1 hour-30 minutes.
