Elote Cafe, 514 S. Boston Ave., is undergoing a remodeling project that includes extending the patio, new paint, new wall art and a grab-and-go deli counter.
“We are about one-third of the way finished,” said chef Libby Auld, who owns Elote with husband Jeramy. “Our goal is to finish by May 14, our fifth-year birthday.
“We also have a new ceiling and new lighting — no more fluorescent lights. The grab-and-go deli counter will include not only our food, but also some necessities like eggs, milk and cheese for a downtown with no grocery store.”
Auld said much of the work is being done after hours and Sundays “so hopefully we won’t have to close much.”
Elote Cafe features innovative Mexican food using local products and sustainable practices. It is open for lunch and dinner Monday-Saturday.
