Ham Salad

I've had ham salad. I've eaten plenty of chicken salad and tuna salad sandwiches and an occasional egg salad. But no ham salad.
To tell the truth, the thought of chopped lunchmeat has always freaked me out a little.
But a friend from Pawhuska shared a ham salad recipe she swears is wonderful. This summer, at a picnic with old friends, this ham salad was a hit.
Two secrets make this ham salad special.
One is that the salad must be served on Hawaiian bread, specifically Hawaiian rolls. You know that sweet bread that comes in the orange packaging? King's brand is one of the most popular.
The other secret is the pepperjack cheese. The combo of the spicy cheese and sweet bread is key.

HAM SALAD
1 pound shaved deli ham
8 ounces cheddar cheese
8 ounces pepperjack cheese
16 ounces sour cream
About 1 cup mayonnaise or Miracle Whip
Salt and pepper
Hawaiian rolls
1. Chop ham, cheddar and pepperjack in a food processor. Mix together with sour cream, mayo and salt and pepper.
2. Serve on Hawaiian rolls.

Ham Salad from Deli ham?
Heavens NO!!
Ham Salad MUST be made with leftover baked ham, preferably smoked. There just isn't any other way!
Other than that, a little mayo (or try a reduced salad dressing like ranch), a little sweet pickle relish, worchester sauce, some seasoned salt and pepper to taste.

Bruner's Meat Market has a great ham salad. I'd love to have the recipe for that if anyone out there knows what I'm talking about. I'm going to try the deli ham, but I, too, have always made ham salad as a means of getting rid of that last chunk of my Cure 81 that's hard to get into slices. However, with deli ham, you can make it any time and not wait for leftovers! As for dressing, America's Test Kitchen did a taste test on low fat/no fat mayos. Hellman's Reduced Fat Mayo won as a low-fat alternative to real mayo as long as it's mixed into salads. I've started using that in chicken and tuna salads. It's not bad.
