Homemade tartar sauce

I would never make my own ketchup. But I love people who have the time and interest to do so.

There are so many things that most of us consider too much trouble to make ourselves.

A friend and Tulsa World reader named Brenda recently e-mailed me about fried catfish and homemade tartar sauce.

I understand that once you've made homemade tartar sauce it's hard to go back to the canned stuff.

Brenda's recipe is simple: Mix mayonnaise and mustard in about a three-to-one ratio. Add finely chopped dill pickles, a little dill pickle juice and Louisiana hot sauce.

Here's another homemade version from Food Network star Tyler Florence.

TARTAR SAUCE
1 cup mayonnaise
3 tablespoons chopped capers
10 tablespoons chopped cornichons
2 tablespoons finely chopped flat-leaf parsley
1/2 lemon, juiced
Dash hot sauce
1 tablespoon extra-virgin olive oil
1. In a small mixing bowl, combine all ingredients. Chill before serving to let the flavors marry.
