How HoneyBaked Ham glazes its hams

Last week we featured the HoneyBaked Ham Co. on one of our restaurant pages. A few years ago I got to watch the glazing process for HoneyBaked hams.

A worker wielding a torch first caramelized five to seven layers of a sugar-based mixture over the surface of the ham. He again used the torch to melt additional layers of a mixture of honey, brown sugar, cinnamon and other spices to give the glaze a golden surface.

Then he split the whole ham into two sections and "cleaned" the exposed middle surface with a metal scraper to visually enhance the finished product. The last step was to wrap the ham in shiny paper.
