I'd Sooner be eating Cowboy dip

Warm up with cheese dip this weekend.

Many die-hard OU and OSU fans will be braving the elements to see which team reigns supreme on Saturday.

But I’ll be watching the game in my warm living room with a fire burning in the fireplace.

For those cold-weather cowards like me who will be watching at home, here are a couple of cheese dips to nosh on instead of biting your nails during what is sure to be a great game.

And in the Scene section of the Tulsa World on Saturday I offer a few more recipes that you can likely make with ingredients that you find in your refrigerator or pantry.


P.S. In the interest of keeping this a fair and balanced blog, if anyone knows of a Sooner dip, send it my way and I’ll share it with our readers.


Cowboy Dip
2 lbs sausage (brown and drain)
2 (8 ounce) packages cream cheese
1 (6 ounce) sour cream
2 (10 ounce) cans mild Ro-Tel tomatoes
1 (3 ounce) can black olives, chopped
1-2 bunches green onion, chopped
1 jalapeno pepper (no seeds) (optional)

Directions:
1. Melt the cream cheese slightly in microwave.
2. Stir in sour cream and then add remaining ingredients.
3. Heat in crock pot.

Easy Bacon, Cheese and Spinach Dip

1 pound Velveeta cheese, cut into 1/2 inch cubes
1 (10 ounce) package frozen chopped spinach, thawed and drained
4 ounces cream cheese, cut up
1 (10 ounce) can rotel diced tomatoes and green chilies, undrained
8 slices bacon, crisply cooked, drained and crumbled

Directions:
1. Cut 1 pound Velveeta cheese into 1/2 inch cubes; place in a large, microwavable bowl.
2. Add spinach, thawed and well-drained, cream cheese, diced tomatoes and chilies and bacon.
3. Microwave on high for 5 minutes or until Velveeta is completely melted and mixture is well-blended, stirring after 3 minutes.
4. Serve hot with tortilla chips or assorted cut-up fresh veggies.

You don't need a Cowboy Dip and a Sooner Dip recipe, just name one Bedlam dip and be done with it. How hard is it?
