The Jenks Herb and Plant Festival is Saturday. It will be a great day to pick up your favorite herbs to use all spring and summer long.

In Saturday's Tulsa World, you'll find more information about the festival, plus recipes from the organizers of the festival. These women are good cooks, whether they're cooking with herbs or not.

They shared a few recipes with me that can be dressed up with herbs, including this cupcake frosting. For fancy cupcakes, use sugared or edible flowers or herbs on top.

The frosting isn't as sophisticated as a buttercream, but it does the job, and believe me, everyone will love it.

Cupcake Frosting
1 box instant pistachio pudding mix
1 small can crushed pineapple (chilled)
1 large container Cool Whip
1. Combine pudding mix and pineapple (undrained) in mixer, and mix until slightly thickened.
2. Fold in Cool Whip.
3. Spread frosting on cooled cupcakes or cake. If using for cake, add 1/2 cup chopped nuts.
