Lemon Bars
A few days ago, I was given a bundle of recipes from an estate sale. I could hardly wait to spread them out on the table, knowing there would be at least one gem in all of those handwritten index cards and scribbles on wide-ruled paper.
In between the ham loaves and "impossible" chicken pies, there were some great ones... taco soup, chili, lemon bars, brisket.
It's sad to think that no one in this woman's family wanted her recipes. But it's good to know they didn't end up in a trash can. If I could, I would promise her they're in good hands.
Here's one of those recipes, which looks so, so simple. I'm going to try it this weekend. If any of you decide to give it a try, let me know what you think.
Easy Lemon Bars
1 package one-step angel food cake
1 (21-ounce) can lemon pie filling
Powdered sugar icing
Lemon extract flavoring (optional)
1. With a spoon, stir together cake mix and pie filling. Do not use an electric mixer.
2. Pour batter into ungreased jelly roll pan (10-by-15-inch). Bake for 20 to 25 minutes at 350 degrees. Cool, then frost with powdered sugar frosting flavored with lemon extract, if desired
