Microwave cooking

Today I spoke with a Tulsa World reader who said she doesn't know why more people don't cook with their microwaves in the summer.

When they don't want to heat up the kitchen, most people turn to the outdoor grill or a Crock-Pot. (In Wednesday's Scene section you'll find a story about cooking beans in a Crock-Pot.) But what about the microwave?

In the '70s and early '80s, microwave cooking was big. Cooks couldn't believe they could make an entire chicken dinner or vegetable dish in just minutes. But the newness of the microwave wore off, and now it's seen as perhaps the lowest of low-brow cooking.

But maybe we're missing something. Do any of you cook with your microwave in the summer? What are your favorite recipes or things to make?

Here's one from a Tulsa World reader.

HOT CHICKEN SALAD
2 cup diced cooked chicken
2 cups chopped celery
3 tablespoons onion
3 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup chopped pecans
1 cup sliced mushrooms
3/4 cup mayonnaise
1 (10-ounce) can cream of chicken soup
1 cup crushed potato chips
1. Mix together all ingredients (except soup and chip) in a microwave-safe baking dish. Spread soup over top. Sprinkle with chips.
2. Cook on high in microwave for 20 minutes.
