Oui 3 Restaurant & Wine Bar has opened at 3509 S. Peoria Ave. in the Consortium.

The restaurant, which seats about 80, was about half full with no advance notice for a soft opening Thursday night, so reservations are strongly recommended.

It's motto is "the art of eating well," featuring "artful American cuisine with an emphasis on seasonal ingredients," according to managing partner Allison Goss.

Proprietor-chef of oui3 is Ouida Merrifield. Goss is her granddaughter. Merrifield's daughter, Karen Eddy, is contributing partner, and a brother, Scott Garrett, a certified sommelier, set up the bar and wine list.

"It's very much a family endeavor," Merrifield said. "The 3 in oui3 stands for three generations."

The opening weekend menu features nine appetizers, seven entrees and three desserts.

Among the entrees are grilled Colorado lamb chops, pan-seared Idaho trout, char-grilled 6-ounce tenderloin, agave-glazed salmon and egg noodles with jumbo shrimp. Prices range from $19 to $31.

"Because of the time of the year, the dishes are relatively light, grilled or sauteed," Goss said.

"I can tweak the menu every day, so it's always going to be changing to take advantage of the best ingredients available," Merrifield said.

Merrifield has been a longtime familiar face on the Tulsa culinary scene. Her previous restaurants have included Polo Grill, La Cuisine, Ciao! and Poets, among others.

"The food we have here is how she always cooked for us at home," Goss said. "It's great."

Oui3, which has been remodeled in the old Garlic Rose space, is open 5-10 p.m. Monday-Thursday and 5-11 p.m. Friday-Saturday.

"We will add lunch as soon as possible," Merrifield said.
