Pao de queijo (a.k.a., "bread muffin thingy")

As I alluded to in today's column, which detailed a conversation with a Brazilian exchange student named Mateus, here's a recipe for this fantastic cheesy bread muffin thingy -- pao de queijo. It's translated from Mateus' mother, but he assured me it's correct. And I can assure you that it's quite yummy!

Pao de Queijo

3/4 cup baking mix (like Jiffy or Bisquik)
3/4 cup cornstarch
1/2 cup milk
1/2 cup soy oil (corn or canola are fine, too)
2 whole eggs
1 teaspoon salt
1/2 pack blended cheese

Simply mix ingredients, then pop in oven for about 40 minutes on 350 -- or 'til golden brown. You want 'em a smidgen gooey.
