Spam champion

Sorry Spam lovers, but I can hardly write this without gagging.

A "burger" made with Spam, cheese, guacamole, jalapeno peppers and salsa won the National Spam Championship Award.

Last fall, the best Spam recipes from 40 state fairs across the country were collected. Of those first-place recipes, one was recently chosen the Spam champion. That winner, Ron Pearman, took first place at the Colorado State Fair for his Mini Spam Nacho Burgers.

Pearman won $3,000 for his creation.

The Tulsa State Fair is still months away (Oct. 1 to 11), so you Spam lovers have plenty of time to invent a Spam creation that could crown you the next Spam king or queen.

MINI SPAM NACHO BURGERS
Makes 12 mini burgers

For the salsa:
3 tablespoons red wine vinegar
2 teaspoons honey
2 teaspoons minced canned chipotle chile in adobo sauce
3 plum tomatoes, seeded and diced
3 tablespoons diced red onion

For the burgers:
1 (12-ounce) can Spam Classic
12 small squares cheddar cheese
1 (12-ounce) package small Hawaiian sweet rolls, lightly toasted
1 cup prepared guacamole
6 red pickled sliced jalapeno peppers, cut in half

1. In medium bowl, stir together the salsa ingredients; set aside.
2. Slice Spam Classic into 6 (1/2-inch thick) slices. Cut each slice in half (you will have 12 squares). Lightly grill or fry Spam squares until lightly browned on both sides.
3. Space one slice of cheese on each piece of Spam Classic. Let cheese begin to melt. Place grilled Spam Classic on toasted roll bottoms. Top each burger with guacamole, tomato-chipotle salsa and a piece of jalapeno pepper.

Had my kids with me at the store a while back. They saw Spam and wanted to try it. I grilled it on the outdoor grill with grilled onions and peppers on a toasted bun. They actually loved it.
