Splash Dining. I wonder what our health department would say?

I received a release from the Ritz-Carlton, Dove Mountain, in the high Sonoran desert, about a new dining experience it is offering -- Splash Dining -- a "new in-the-pool dinner setting with the legs of diners, servers, chairs and tables refreshingly immersed for the cooling culinary occasion."

Refreshingly immersed? Well, OK.

The release goes on to say diners are seated at tables "placed into the waters of romantic, night-lighted Turquesa Pool. They check their shoes upon arrival and are invited to wear shorts or knee-length pants for the special occasion, which begins as they wade to their reserved seats partially submerged in the pool. A customized meal prepared by the chefs of the Ritz-Carlton is then served by a wading server team, with dessert personally delivered by a chef wearing the aquatic version of chef's whites."

Now, no matter whether that dessert chef is male or female, an aquatic version of chef's whites conjures up all kinds of visions.

And what about possible mishaps? Who is to say that a server might not slip and splash chlorinated water over your $300 sea bass. Or how about that guest -- that loud one who is one Tequila Sunrise over the line -- who belly flops in the pool to join you?

I don't know, but it just might be worth it. The cost is $300 per couple for a three-course menu with a champagne toast. You can make your reservations at 520-572-3000.
