Stirring the pot

Last week I made sure every i was dotted and t crossed on my church’s cookbook. After five months of work, our committee submitted the book – with all 500 recipes – to the printer.
Our book should be ready in the fall – just in time for Christmas gifts.
I haven’t seen a bound copy yet, but I love it already. I love it for the title, “Saints in the Kitchen – 100 Years of Stirring the Pot.” I love it for the chicken casseroles and sheet cakes. And, I love it for the women behind the recipes.
Some of the recipes don’t require explanation. One, a baked vegetable dish with Ritz cracker crumbs on top, was submitted by at least five members. Most people who submitted it simply called it the “Dubie dish” – named for a longtime member of the church with that last name.
Her dish was a fixture at every church dinner, and even though she’s no longer living, her dish carries on.
That’s the neat thing about a church cookbook.
From the book…
Calico Beans
½ bag pinto beans
1 pound ground beef, cooked and drained
½ pound diced bacon, cooked and crumbled
½ cup onion, diced
½ cup brown sugar
½ cup ketchup
2 tablespoons vinegar
1 tablespoon mustard
1 teaspoon salt
1. Soak beans overnight. Rinse and cook according to package directions.
2. Mix all ingredients, and add to beans. Keep warm in crock pot.
Fruit Pizza
1 roll Pillsbury sugar cookie dough
1 (8-ounce) package cream cheese, softened
1/4 cup sugar
Assorted sliced fruit: kiwi, strawberries, grapes, peaches, blueberries, bananas, Mandarin oranges
1. Press out cookie dough on pizza pan. Bake as directed and cool.
2. Mix cream cheese and sugar and spread over dough. Layer fruit.

That is wonderful that you take time to help your church with such a worthwhile cause. Church cookbooks are always great-especially when they include favorite recipes from those who have gone before us. Helps keep their memory (and their recipes!) alive. You'll have to let us know when it's published so we can buy a copy. You did submit some of your own recipes, I hope!
