Making waffles is almost as fun as eating them.
What other food can you make where you pour batter into an electric iron and listen for the sizzle to stop?
I love waffles, but I’m still on the hunt for the perfect waffle. I’ve made them with buttermilk, yeast and baking mixes, and with pecans, blueberries and chocolate chips.
One sweet Christmas present I received was a Williams-Sonoma waffle mix with maple flavor and little bits of candied pecans. It’s a good one, so I think I’ll stick with it for a little while.
If any of you have a good waffle recipe or method, please post it so we can all see.

I used to have a fetish with buckwheat pancakes made with fresh blueberries and then smothered in real maple syrup and molasses. I'm not sure if that would translate to waffles or not, but it's a healthy alternative to white flour and artificial flavors.

I use Alton's waffle recipe frequently, and it's awesome and easy. If you want to cut it in half, the only thing you have to worry about is the 3 eggs. If I have jumbo eggs, I use one. If I have large or medium eggs, I use two.
I also don't ever buy buttermilk, so I make sour milk by adding a tablespoon of apple cider vinegar to a cup of milk. Stir and let sit for 5 minutes.

Here's Alton Brown's recipe:
4 3/4 ounces all-purpose flour, approximately 1 cup
4 3/4 ounces whole-wheat flour, approximately 1 cup
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 tablespoons sugar
3 whole eggs, beaten
2 ounces unsalted butter, melted
16 ounces buttermilk, room temperature
Vegetable spray, for waffle iron
Preheat waffle iron according to manufacturer's directions.
In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.
Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.
