Watermelon and the Fourth of July

Maybe you’re lucky enough to have the rest of the week off. If so, I hope you’re having fun at the lake or the beach, watching fireworks under the stars and eating watermelon until the juice rolls down your chin.

I won’t be so lucky. But I do expect to have a nice Fourth of July. I’ll probably eat some good food and maybe even catch some fireworks from my aunt’s backyard.

I also plan on making this drink, which I clipped from a magazine last year. Pink Drink sounds perfect for the Fourth of July.

So even if you won’t be lounging by the pool or the lake, you can still sip a pink watermelon drink and celebrate summer.

If you have any great food over the Fourth of July, let me know. I would love to know what good things you all were eating this holiday.

In the meantime, here’s the Pink Drink.

Pink Drink
Serves 4
2 cups strawberries
1 cup chopped watermelon
Juice of 2 oranges
Juice of 1 lime
1. Blend all ingredients in blender of food processor until smooth. Cover and chill. Shake or stir before serving. Pour into chilled glasses.
