Friend, chef and Tulsa foodie supreme Larry Gober loves a good hamburger, but he can also cook healthy food in such a way that makes you forget that hamburger.

One of the ways he does it is by using the very best ingredients he can find, including beans and grains from Rancho Gordo. He's a big fan of Rancho Gordo's dried heirloom beans and most recently their red quinoa.

Larry shared a recipe he created with the people at Rancho Gordo for a quinoa tabbouli, and they loved it so much they posted it on their Web site. You can find it here at tulsaworld.com/quinoatabbouli

Here's the recipe.

QUINOA TABBOULI

1 cup quinoa, uncooked

1 cup chopped parsley

1 cup Santa Sweet tomatoes, quartered

1/2 cup diced English cucumber

1/4 cup chopped mint

3 scallions, chopped

1 clove garlic, minced

1/4 cup fresh lemon juice

1/4 cup good olive oil

1 teaspoon salt

1. Cook quinoa in 1 1/2 cups simmering water, drain and cool.

2. Mix everything in a bowl and toss well. Chill.
