Next time you see good-quality meat on sale, grab it.

But instead of throwing it, package and all, in the freezer, take just a couple of minutes for prep work.

I learned a great trick from food writer Mark Bittman's blog:

Unwrap the frozen meat from its packaging, rub it with olive oil, sprinkle with salt and pepper, wrap in plastic wrap and then seal in a Ziploc freezer bag. Toss it in the freezer and defrost whenever you're ready.

The trick is the olive oil protects the meat from dehydration. So you won't have any weird-tasting, freezer-burned meat that doesn't taste fresh.
