I was chatting with Mark Howard of Cardigan's yesterday, and he said he and his partners almost have completed the conversion of their Chick n Char restaurant in Bixby to a smaller version of Cardigan's they will call Cardigan's South.
The new restaurant, located at 10912 S. Memorial Drive, is expected to open in a week or so after some inspections and loose ends are completed.
"It's not a large space, but we've managed to get about 70 seats in there," Howard told me. "I think the remodel has turned out really nice."
Cardigan's South will serve lunch and dinner, same as the larger restaurant at 6000 S. Lewis Ave.
