This is the last week for executive chef Grant Vespasian at The Tavern. He said Tuesday he is taking a similar position at Oaks Country Club.
“I’m moving on,” Vespasian said. “It happened pretty fast. The club contacted me, and we talked, and they made me an offer I couldn’t refuse.”
Vespasian said he will be in charge of the dining room and the food for banquets, parties, catering and special occasions at Oaks, 6500 S. 49th West Ave.
“I will be in charge of all aspects of the food, and I will be making a lot of changes,” he said. “I will put my take on what I think country club food should be and what I think they will like.”
Vespasian said he will start his new job Sept. 24.
He has been executive chef at The Tavern, 5 E. Brady St., since it opened in January 2011. He went there from Palace Café, where he was sous chef.
At The Tavern, Vespasian was known for his chef’s table dinners, the outdoors Wine & Swine Banquet and Sunday night fried chicken dinners.
“I definitely will do something with fried chicken at the club.,” he said.
The Tavern is part of the McNellie’s Group of restaurants. A spokesperson for McNellie’s said Vespasian’s replacement has not been decided.
