My kids love Elmo spaghetti o's.

But after a couple of nights of spaghetti out of a can or blue box mac and cheese, I develop a serious case of mommy guilt.

Sometimes I try to convince myself that it's not so bad. “Elmo spaghetti o's are organic!” “Mac and cheese is at least one serving of dairy!”

Then I remember how I once vowed that my children would never eat food out of a box. That’s how I ended up rolling out pie dough at 10 o'clock at night last week.

It's after everyone is tucked into bed that I do my cooking. When I'm smart, I make it easy on myself and assemble something for the Crock-Pot the next day or boil some chicken breasts for chicken salad.

But last week, at 9:30 p.m., I started making quiche. That meant making the dough, steaming broccoli, par-boiling potatoes and whipping eggs.
Unless you’re a Top Chef, this can’t be done in a mere 20 minutes.

By the time the quiche was in the oven, "Nightline" was coming on.

The next night, we had quiche for dinner. And it was good.
