Costa Vida Fresh Mexican Grill, a fast-growing chain restaurant featuring "Baja-inspired" food, has opened at 6746 S. Memorial Drive.
Sarah and J.D. Gardner founded Costa Vida following a trip to the Baja Peninsula. Their first restaurant opened in Layton, Utah, in 2003.
Costa Vida restaurants feature "fresh, all-natural" ingredients and make their own tortillas in each restaurant daily. The pork and shredded beef are seasoned and slow-cooked for several hours.
The restaurant, located on the west side of Memorial Drive in space that held the original Cosmo, is open 11 a.m. to 10 p.m. The phone number is 918-451-0336.
"We currently have 43 restaurants operating in nine states and anticipate another 10 or more new openings this year," said Brian Dixon, director of brand marketing.
