Costa Vida, a fast-growing chain restaurant featuring "Baja-inspired" food, is scheduled to open in Tulsa in late August or September.
It will be located at 6746 S. Memorial Drive, the original site for Cosmo, which now resides in Brookside.
"Costa Vida is one of the 50 fastest-growing fast-casual chains in the country," said Brian Dixon, director of brand marketing, in an email interview.
"We currently have 43 restaurants operating in nine states and anticipate another 10 or more new openings this year."
Sarah and J.D. Gardner founded Costa Vida following a trip to the Baja Peninsula. Their first restaurant opened in Layton, Utah, in 2003.
Costa Vida restaurants feature "fresh, all-natural" ingredients and make their own tortillas in each restaurant daily.
