Whether you crave an Irish Ale Cocktail or a creamy, minty shake I have selected a variety of drinks for you to choose from for St. Patrick’s Day.

The Irish Ale Cocktail uses ginger beer, which many of us have grown to love in cocktails such as the Moscow Mule and the Dark and Stormy.

The Emerald Mint Milkshake is similar to the beloved Shamrock Shake featured at McDonald’s.

I also added a couple of recipes for martinis and one for an Irish Coffee, just in case there is a chill in the air.

Irish Ale Cocktail

2 ounces Irish whiskey
3 lime wedges
3 ounces ginger beer

1. In a highball glass, add whiskey and squeeze lime wedges into glass.
2. Fill with ice, top with ginger beer and stir to incorporate.

Emerald Mint Milkshake
3 servings

1 pint (2 cups) vanilla ice cream
1 cup milk
1/2 teaspoon peppermint extract
1/4 teaspoon green food color
Whipped cream and green sprinkles (optional)

1. Place ice cream, milk, peppermint extract and green food color in blender; cover. Blend on high speed until smooth.
2. Pour into glasses. Top with whipped cream and sprinkles, if desired. Serve immediately.

Peppermint Paddy Martini
4 servings

8 ounces Irish cream liqueur
2 ounces crème de cacao liqueur
2 ounces vanilla vodka
2 ounces heavy cream
1/4 teaspoon Pure Peppermint Extract
Peppermint Whipped Cream, recipe follows (optional)

1. Fill cocktail shaker 1/3 full with ice. Add first 5 ingredients; shake until well mixed and chilled. Strain into martini glasses.
2. Top each with a dollop of Peppermint Whipped Cream, if desired.

Peppermint Whipped Cream: Beat 1 cup heavy cream, 1/4 cup confectioners’ sugar and 1/4 teaspoon peppermint extract in medium bowl with electric mixer on high speed until stiff peaks form. Makes about 2 cups.

Flying Grasshopper

1 ounce white creme de cacao
1 ounce vodka
1/3 ounce green creme de menthe

1. Shake white creme de cacao, vodka and green creme de menthe in a cocktail shaker.
2. Strain into the chilled martini glass.

Irish coffee

1 1/2 ounces Irish whiskey
1 teaspoon brown sugar
6 ounces hot coffee
heavy cream

1. Combine whiskey, sugar and coffee in a mug and stir to dissolve. Float cold cream gently on top. Do not mix.
