We had a lot of fun making the food quiz that ran Wednesday in the Scene section of the Tulsa World.
I scored an 87.
And, yes, that does not really count because I made the majority of the test. Knowing that I am a pretty adventurous eater, but certainly not the most adventurous, I set out create a quiz where I scored in the mid-80s.
Some of the things that I haven’t had? Crappie, but I learned during the Bassmaster that is the fish most often caught for food in Oklahoma.
I also have not had babka, paddlefish roe or calf fries.
And some of the items I only recently tried as a part of our “Have you tried…?” feature that runs on Thursday. Kumquats, celery root and cacao nibs are three of the foods that we discovered for those stories.
Here is a simple recipe for a peanut butter cookie featuring cacao nibs. Tasters enjoyed them and eating them will score you another point on the quiz.
Here is the quiz. Peanut Butter Cacao Nibs Cookies
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter, room temperature
1/2 cup peanut butter
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup cacao nibs
Method
1 Beat the butter until creamy, 2 minutes. Add the sugars, beat for 2 more minutes. Mix in the peanut butter and egg. Mix together the dry ingredients - flour, baking soda, baking powder and salt. Stir the dry ingredients into the sugar butter mixture. Add cacao nibs.
2 Wrap dough in plastic and refrigerate at least 30 minutes.
3 Preheat oven to 375°F. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.
