If it ain't broke, don't fix it.

That's a similar mentality I must have when it comes to ordering at restaurants I've visited multiple times. Like Keo, 3524 S. Peoria Ave., which has fabulous spring rolls, a yummy green Thai curry and other awesome dishes. Oh, and their Pear Martini! That's a dish, too, right?

Anyway, after I've had such a delightful meal, it's difficult not to order it again. That's why the item I've had the most at Keo is their Vietnamese chicken salad, a refreshing toss of poached white-meat chicken, cilantro, mint, shredded carrots, and red and green cabbage, with a lovely chili-lime dressing I could totally suck up with a straw. In the privacy of my own home, at least.

It comes topped with roasted peanuts, and I suggest spicing it up with Thai peppers. Wonderful any ol' time of year, I love it especially now.

Plus, it goes very well with that Pear Martini -- but that's probably a blog for another day.

Peace, love and cilantro ... XOXO

P.S.: Have you tried something like this somewhere else in town? Where is it, and what do you like about it? Or do you have a recipe like it? PLEASE SHARE!
