Bill Parkey, who heads the ownership group for the rebirth of S&J Seafood & Oyster Bar at 320 E. First St., said Thursday that he projects a mid September opening.
"I wish we could hit our Sept. 4 target date, but that might be optimistic," Parkey said. "It more likely will be a week or two after that.
"We are a little behind where we wanted to be because getting the fire-suppression system where it needs to be was a bigger project and took longer than we expected. You run into things like that in these old buildings."
A quick tour of the restaurant space revealed a lot of progress since I last checked it out a couple of weeks ago. Workers were installing wall tiles at the entrance, and much of the painting appeared to be completed.
Founders Michelle and Howard Smith operated S&J Seafood restaurants in several locations over two decades. They opened their first one in 1983 at 3301 S. Peoria Ave. and closed the last one in 2004 at 3629 S. Peoria Ave.
Howard Smith, who formerly had business relations with Parkey's father, Ike, is serving as a consultant on the new restaurant.
