
My entire day's worth of Weight Watchers points for one more plate of this. Sigh ...
Once upon a time, back when Nelson's Buffeteria was still downtown, I looked forward to my weekly visit -- sometimes twice -- for shouts of "Hello, chicken-fried!" and a side of mac and cheese.
Since I was a kid, I've loved macaroni and cheese, be it my mom's or Mamaw Wright's cheesey, soupier version or Mamaw Walter's baked one, with bubbling cheese on top. Weight Watchers or not, I could devour a bowl of any of 'em, any time you set it in front of me (hint, hint).
Of all the foods I love, mac and cheese tends to rank No. 1 on my list of comfort foods, followed by baked potatoes with nothing but butter and a little salt. Simple, simple, simple, just like Rue McClanahan told me I was in our first and final phone interview.
To me, comfort food has almost always been synonymous with "home-cooked," from Mom's spaghetti, Mamaw Wright's Swiss steak and Mamaw Walters' roast -- and the gravy and homemade mashed potatoes that always went with it. Oh, and the garden-fresh green beans with bacon grease, Mmm ...
