Breakfast restaurant aims to go over easy

The restaurant has moved and the marquee has a new look, but Jimmy's Egg is still serving up the same omelettes and other breakfast staples.

Jimmy's Egg reopened last month near 41st Street and Peoria Avenue after leaving its decade-long home near 51st Street and Yale Avenue in August.

In addition, the franchisee now has plans to expand the Oklahoma City-based chain into at least eight more locations in northeastern Oklahoma — part of an aggressive agenda for going nationwide.

Even with other restaurants folding left and right, Jimmy's Egg owners think they can power through the recession.

"With the economy the way it is, people will be looking for value, and that's our strength," said Ken Burke, franchisee and operator of the newly opened restaurant.

Most entree items on the menu cost between $5 and $7, Burke said.

Jimmy's Egg decided to move last summer after plans to widen Interstate 44 brought an offer for the location from Jamil's, an iconic Tulsa steak house that was losing its property to the expanded highway.

With the new location, the Jimmy's Egg owners have spruced up the company's logo and added items to the menu, including a spinach omelette and other breakfast offerings.

They hope the new site will be only the first of many Jimmy's Egg restaurants to dot northeastern Oklahoma.

Next on the list is one under construction at 71st Street and Garnett Road. That restaurant should open in March, Burke said.

Burke's franchise agreement calls for at least eight locations in the next 4 1/2 years. He is planning others in Jenks, Bixby, Owasso and Bartlesville.

Burke's brother, Jim, a principal owner in the Jimmy's Egg franchise, said the company is pushing into Wichita, where it recently opened its first restaurant. It has also signed franchise agreements in Springfield, Mo., and Houston.

"We are going to open eight new Jimmy's Eggs this year and hopefully more after that," Jim Burke said.

The chain now has 15 restaurants.

You will make a lot of money off our family and friends at 71 and garnett. Only breakfast place is Ihop. It will be nice to have a change.

I am betting on the one at 41st and Peoria closing within a year. That area is a BBD area. I will continue my patronage at BBD where the Number one voted waiter in Tulsa is... Hey Jeb.

I love Brookside By Day as well. It is like family there. They have always been good and treated me and my family nice.
