In her book "The Chocolate Connoisseur," Chloe Doutre-Roussel writes of eating her first piece of chocolate by 6 a.m. every day.
Such is the life for a professional chocolate buyer, but Doutre-Roussel encourages us all to eat a little chocolate every day. She would hope we would pass on most supermarket chocolates for the little treasures made by high-end and small-batch chocolatiers. But that's not always possible.
Whatever chocolate you choose, this is the month to indulge. Pick up a heart-shaped box of fancy truffles or a more-than-you-would-usually spend chocolate bar, and savor it.
Let it melt on your tongue or coat the roof of your mouth.
