Learn to make new, classic recipes at November classes

Take some of the stress out of holiday cooking by learning some tips from the pros.

Cooking classes this month feature recipes for the classics, as well as some alternatives. Here's what area cooking schools have to offer for November:

WEDNESDAY

Puff Pastry - Sweet and Savory: Puff pastry lends itself to sweet and savory foods, so we'll make dessert and some delicious appetizers, 6 to 8 p.m., Urban Kitchen, $55.

Pie Party: Learn blind crust baking, cream filling and a lattice-top pie, 6:30-9 p.m., DuJour, $75.

THURSDAY

Ravioli - Let's Stuff It: We'll make a basic pasta then a couple of different fillings (a meat and a veggie) to stuff inside it, plus an easy technique for making ravioli, 6-8 p.m., Urban Kitchen, $55.

3 Guys Smokin' Holiday: Smoked turkey, pork tenderloin garnished with a raspberry relish, red beans and rice, butternut squash pie, Olga's Bavarian strudel, 6:30-8:30 p.m., The Stock Pot, $45.

Seasonal & Stylish: Mussels with tomato saffron butter, phyllo-wrapped salmon with lemon horseradish cream, citrus berry compote, 6:30-9 p.m., DuJour, $75.

Pumpkin: Spicy curry pumpkin soup, pasta and penne with pumpkin sauce, grilled salmon with a pumpkin seed sauce, 7 p.m., NeMar Noulles, $55.

SATURDAY

Saturday Night Date Class: Salad nicoise, bouillabaisse, cheese course, 6:30-9 p.m., DuJour, $75.

MONDAY

Turkey: Breaded turkey cutlets with a warm cranberry and golden raisin sauce, stacked turkey enchiladas, ground turkey hash with potatoes and peppers, 7 p.m., NeMar Noulles, $60.

NOV. 14

Turkey Dinner - The Alternative: Turkey roulade, savory apricot dressing, chipotle sweet potatoes and a veggie side, 6-9 p.m., Urban Kitchen, $80.

Fall Salads: Fall fruit salad with yogurt dressing, roasted beet and blue cheese salad, dried cranberry salad, 7 p.m., NeMar Noulles, $55.

NOV. 15

Party Bites: Chipotle corn dip, triple creme cheese with cognac-soaked dried fruit, sundried tomato palmiers, 7 p.m., NeMar Noulles, $60.

Gnocchi, the classic Italian dumpling: Foolproof technique for making these little pillows of love, Gorgonzola cream and a light, fresh tomato sauce, 6 to 8 p.m., Urban Kitchen $55.

NOV. 16

Holiday Breakfast and Brunch: Blue corn pancakes with fresh blueberries, smoked salmon egg scramble with herbed corn muffins, Mexican crustless quiche, 7 p.m., NeMar Noulles, $60.

NOV. 17

Knife Skills: From brunoise to dice, from chiffonade to julienne, learn the proper use of your knives, 6:30-9 p.m., DuJour, $75.

NOV. 19

Soups and Breads II: Warm up with soup and bread. Recipes include two soups, a yeast bread and quickbread, 11:30 a.m. and 7 p.m., Akin's, $10 in advance, $15 day of class.

NOV. 24

Family Still in Town? Learn how to make grilled porcini with Pecorino and rosemary garlic oil, pasta carbonara, blushing pears, 6:30-9 p.m., DuJour, $75.

NOV. 27

OPAH! Date Night Class: Herb-roasted lamb, fresh and flavorful Greek salad and much more, 6 to 8 p.m., Urban Kitchen, $120 per couple.

Gifts from the Sea: Oysters and mignonette sauce, seared salmon with ginger soy vinaigrette, spiced hot chocolate and cinnamon beignets, 6:30-9 p.m., DuJour, $75.

NOV. 28

Flatbreads: Carmelized onion and feta, arugula, prosciutto and Parmesan primavera, 6:30-9 p.m., DuJour, $75.

Classics from SAVEUR: SAVEUR magazine has featured 101 Classic Recipes in its October issue since its inception in 1994. Learn three of the 101 Classics, an appetizer, a main dish and a dessert, 6-8 p.m., Urban Kitchen, $55.

NOV. 29

Paella: That classic Spanish rice dish that seems so hard, so complicated that you would never attempt it, 6-8 p.m., Urban Kitchen, $60.
