Day 4: cherry chews with cream cheese icing

Mary Long discovered her recipe for Cherry Chews with Cream Cheese Icing while doing a favor for a friend.

"I had an elderly friend and she needed to make these cookies for a special occasion, but she didn't think she was up to making them," Long said.

"I said, 'That's all right, I will cook them for you,' " Long said. "And when I made them, I had cookies all over the kitchen."

That's was how the cookies got their nickname as "Lois' Chews," after the friend who she made the cookies for, Long explained.

Long said she first made the cookies about 12 years ago, and she wasn't really sure where her friend found the recipe.

But she does know that the chewy cherry-packed cookie was good enough to make again and again.

"They just have so much texture and they have a really good flavor," Long said. "And I love coconut."

The cookies also look pretty on a holiday platter, tinted pink by cherry juice and dotted with red maraschino cherries.

Long said that she and her husband share a love of cooking, and during the holidays she loves to bake these cookies, as well as all the traditional baked goods.

"I am originally from England and the recipes are very different there," she said. "I bake a lot, probably too much for just the two of us."

CHERRY CHEWS COOKIES WITH CREAM CHEESE ICING

3 cups sifted flour

1 teaspoon baking soda

1 teaspoon salt

1 cup + 2 teaspoons margarine, softened

1 3/4 cup sugar

1/2 cup maraschino cherries, well drained, chopped, juice reserved

1/4 cup maraschino cherry liquid

1/2 cup flaked coconut

1/3 cup cream cheese, softened

2 medium eggs

1 teaspoon vanilla

1/4 teaspoon almond extract

2 cups quick cooking rolled oats

1 cup chopped pecans

Cream cheese icing

6 ounce cream cheese

2 tablespoons cherry liquid

2 tablespoons chopped cherries

2 1/2 cups sifted powdered sugar

For cookies:

1. Sift together flour, soda and salt. In another bowl, cream margarine, adding sugar gradually. Blend in cream cheese.

2. Beat in eggs, cherry liquid and extracts. Add flour mixture, blending well. Fold in oats, cherries, pecans and coconut.

3. Drop by teaspoons on greased baking sheet. Bake at 350 degrees for 12 minutes.

4. Top with cream cheese icing.

For cream cheese icing:

Blend cream cheese and add cherry juice. Add sugar gradually blending it well. Add chopped cherries.
