Day 11: Pumpkin Cookies with Caramel Icing

With five children, six grandchildren and seven great-grandchildren, Wanda Key has a lot of people to bake cookies for.

And her Pumpkin Cookies with Caramel Icing are the perfect sweet treat from Thanksgiving all the way to the end of the year. Key said she believes that she found the recipe in a magazine about 25 years ago.

“With five kids and three girls who played basketball, those cookies went to classes, on buses to basketball games and there are several people who expect to get them for Christmas,” Key said.

The cookie has a surprisingly light and airy texture and subtle pumpkin and spice flavor. They are good without the icing, but the icing gives it a little something extra.

Key said that she was fortunate enough to be a stay-at-home mom and “loved every minute of it.”

She loves to cook and has gathered many recipes and cooking tips over the years, Key said.

This year she looks forward to the family starting to gather early so the holiday celebration can begin.

“It gets to be a big group and we will do a brunch on Sunday,” Key said. “That is what the holidays are all about, family and good food. We play games, and we just have a good time.”

PUMPKIN COOKIES WITH CARAMEL ICING

1 cup Crisco
1 cup sugar
1 cup canned pumpkin
1 egg
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1 teaspoon salt
1 cup raisins or nuts (optional)

1. Cream Crisco and sugar together. Add pumpkin, egg and vanilla.

2. Sift and add dry ingredients. Drop by teaspoon on greased cookie sheet. Bake at 350 degrees about 10-15 minutes.

ICING

3 tablespoons butter
3/4 teaspoon vanilla
4 tablespoons milk
1/2 cup brown sugar
Powdered sugar

1. Combine butter, vanilla, milk and brown sugar. Cook over low heat to a rolling boil, stirring constantly.

2. Remove from heat and add powdered sugar until thick enough to spread.
