Because the new Prhyme Downtown Steakhouse offers three types of beef steaks - American grass-fed, prime 21-day wet-aged and prime 40-day bone-in dry-aged - my wife and I decided to order a similar cut from two categories and check the difference.

I had a 21-day wet-aged New York strip, and she had the 40-day bone-in dry-aged strip, both ordered medium-rare with an emphasis toward rare.

In a nutshell, wet-aged beef is aged in vacuum bags, and dry-aged beef is suspended or placed on a rack. The latter loses much more water and weight, which accounts for its higher price. Both of our steaks were USDA prime, which represents about 1 percent of beef sold in the United States.

Surprisingly, the wet-aged, in this case, was more tender, juicy and flavorful than the dry-aged, leading me to think we should have ordered the dry-aged very rare.

During the initial run of blue-plate dinner specials, Dilly Deli is offering meatloaf on Mondays, chicken-fried chicken on Tuesdays, pasta on Wednesdays, breakfast for dinner on Thursdays and fried catfish on Fridays.

I was leaning toward going for the meatloaf or catfish, but I wound up there on a Thursday night, looking at breakfast for dinner.

I ordered the Meg, a sandwich that included a fried egg, tomato slice, lettuce, bacon and cheddar cheese on toasted sourdough. It was delicious.

On a recent visit we had the Taos combo, beef chimichanga half dinner with spicy Spanish fries, beef enchilada dinner, broiled chicken salad, turkey melt and breaded chicken strip appetizer.

Our server, Megan, kept the complimentary tortilla chips and salsa flowing while we waited on our entrees.

All of our dishes were tasty, but I was partial to my Taos combo that included a mound of pork adovado (shredded, tender pork marinated in chili pepper sauce and slow-baked), two soft, warm tortillas wrapped in foil, a cheese enchilada and crispy beef taco.

It came with rice and a choice of refried or fiesta beans.
