OWASSO - Los Cabos Mexican Grill and Cantina will expand to Owasso this spring.

Company owners said they have signed a lease on a 7,500-square-foot property at 9455 N. Owasso Expressway, the former home of a Delta Cafe restaurant.

"It just felt like the market was ready for us," said Jimmy Blacketer, a part owner of the Los Cabos chain. "Owasso went through a pretty good growth period a few years ago, and with Claremore and Collinsville in the area we feel like Los Cabos will do really well."

Blacketer said the company hopes to have the 270-seat restaurant opened by late April or early May.

Los Cabos has turned into one of the region's most popular restaurants since opening in Jenks in 2005 at the RiverWalk Crossing development.

The following year, the Blacketer family opened another Los Cabos location in Broken Arrow near Bass Pro Shops.

The restaurants are known for their abundant Mexican platters such as carnitas, blackened tilapia, and chicken and steak fajitas. The owners say they are focused on having casual yet upscale restaurants.

The Jenks location continues to anchor the struggling RiverWalk Crossing, a shopping center that has lost several of its major tenants and smaller retailers.

Blacketer said signs are strong that Los Cabos will be a success in Owasso.

The two existing restaurants are located far to the south in the metro area, and Owasso is one of the area's younger and more affluent cities, according to data from the U.S. Census Bureau.

Blacketer said the owners are planning an extensive interior and exterior remodel to match the "hacienda" style of the Broken Arrow and Jenks locations.

Even with the expansion and good crowds at the two restaurants, Blacketer said the family doesn't have any plans for aggressive growth of the chain to Bartlesville, Oklahoma City or anywhere else.

"We're just doing this one restaurant at a time," he said. "We don't have any plans after this."

The Blacketer family also runs the Waterfront Grill in Jenks, near their Los Cabos location. That 9,600-square-foot restaurant on the Arkansas River opened in 2010 at a cost of about $5.5 million, serving traditional American dishes such as steak and seafood.
